Forgotten Jambalaya

I'm always, always on the lookout for crockpot recipes.  We enjoyed this dish -- even my kids who aren't too crazy about spicy stuff. 


1 can diced tomatoes, undrained
1 can chicken broth
1 6-oz can tomato paste
1 medium green pepper, chopped
3 celery ribs, chopped
5 garlic cloves, minced
3 t dried parsley
2 t dried basil
1 1/2 t dried oregano
1 1/4 t salt
1/2 t cayenne pepper
1/2 t hot pepper sauce
1 lb chicken breasts, cut into bite-sized cubes
1 lb smoked sausage, sliced
1/2 lb uncooked medium shrimp, peeled and deveined
Hot cooked rice

In a slow cooker, combine the tomatoes, broth and tomato paste.  Stir in veggies and seasonings.  Stir in chicken and sausage.  Cover and cook on low for 4-5 hours or until chicken is tender.  Stir in shrimp.  Cover and cook 15 - 30 minutes longer or until shrimp turn pink.  Serve with rice.
